When we talk about Asian Cuisine we think Chinese or Oriental Cuisine, but it is much more than that.

It can be divided into three main groups: East Asian or Chinese, Japanese and Korean Cuisines; South East Asian encompassing Cambodia, Laos, Vietnam, Brunei, Thailand, Indonesia, Philippines, Malaysia and Singapore; and finally, South Asia meaning India, Bangladesh, Sri Lanka, Pakistan and Burma.

And we have to mention the Middle Eastern Cuisine encompassing many countries going from the former Soviet Republics all the way to Egypt.

Chinese Cuisine

We can write many articles about Chinese Food. I have been exposed to it all my life, since my childhood in Cuba that had an immense Chinese population and hundreds of Chinese Restaurants. In the United States Chinese food is as popular as its own dishes. Here I mention a few of the main dishes we all know.

  • Sushi consists of thin slices of raw fish served with rice mixed with vinegar.
  • Onigiri is a quick lunch of rice and fish
  • Nabe meat and vegetables cooked in a broth
  • Chahan is fried rice with many different ingredients
  • Curry Rice taken from the Indians is a little different and very popular in Japan
  • Tempura is vegetables and seafood dipped into a batter and then fried.
  • Yaki is the Japanese word for grilled. Yakiniku is grilled chicken and Yakizakana is grilled fish
  • Udon is noodles served with fish broth and other vegetables and cakes.

Thai Cuisine

  • A mix of sweet, sour, salty and hot is what makes Thai food so delicious.
  • Tom Yam Goong a jumbo shrimp and mushroms
  • Kuay Tiew or noodle soup
  • Som tam or spicy papaya is better served with barbequed chicken and lumps of sticky rice
  • Gai Med Ma Moung is chicken and cashew Nuts
  • Geng Kheaw Wan Gai is chicken with green curry paste
  • Tom Kha Gai is chicken soup with coconut milk and lemongrass
  • Kao Phad is the good old fried rice
  • Massaman Curry is a mix of coconut milk, potatoes, roasted peanuts, bay leaves, sugar, cinnamon, and tamarind sauce accompanied to different kinds of meats.
  • Khao man gai - chicken and rice served with sweet and spicy sauces.
